Sardinia While the Aga Khan may have put the island nation of Sardinia on the map, its distinct and flavorful cuisine is becoming a favorite among those who may not be candidates for a segment on "Lifestyles of the Rich and Famous." Sardinian food is the cooking of the farmers and shepherds a simple, rustic cuisine rich in flavor and texture. The majority of the recipes have changed very little over the centuries, always incorporating the freshest ingredients of the season. In the United States, the Farris brothers have introduced us to the remarkable flavors of Sardinia through their three restaurants: Arcodoro in Houston and Arcodoro and Pomodoro in Dallas. Lovers of fine cuisine flock to the Farris restaurants and have fallen in love with this hybrid of ancient cuisines. Noted food writer John Mariani recently had the opportunity to dine at Arcodoro and posted a review on his Virtual Gourmet Newsletter.
