with Marinated Hotchkiss Tomatoes

|
This is a great summer pot luck dish because it's simple,
it's seasonal, and it has lots of fresh ingredients. Try pairing it with
a Pouilly-fume'
|
||
|
Serves
4
|
||
|
2
|
large ripe Hotchkiss tomatoes, seeded and coarsely chopped | |
|
4
|
oil-packed sun dried tomatoes, drained and coarsely chopped | |
|
1
|
clove garlic | |
|
4
tbsp
|
extra virgin olive oil | |
|
-
|
kosher or sea salt and freshly ground pepper | |
|
1/2
lb
|
garganelle or penne rigate pasta | |
|
1
cup
|
fresh basil leaves, chopped | |
|

|
shaved parmesan cheese | |
|

|
Combine fresh and sundried tomatoes, garlic, oil, salt and pepper in a large bowl | |

|
Marinate at room temperature for 45 minutes, stirring occasionally | |
|

|
Boil pasta in salted water until al dente | |
|

|
Drain well and while still hot, toss with tomato mixture | |
|

|
Coarsely chop the basil and combine with the pasta | |
|

|
Top with parmesan cheese and serve immediately or at room temperature | |
