Pasta with Marinated Hotchkiss Tomatoes

This is a great summer pot luck dish because it's simple, it's seasonal, and it has lots of fresh ingredients. Try pairing it with a Pouilly-fume'

Serves 4
2
large ripe Hotchkiss tomatoes, seeded and coarsely chopped  
4
oil-packed sun dried tomatoes, drained and coarsely chopped  
1
clove garlic  
4 tbsp
extra virgin olive oil  
-
kosher or sea salt and freshly ground pepper  
1/2 lb
garganelle or penne rigate pasta  
1 cup
fresh basil leaves, chopped
-
shaved parmesan cheese

Combine fresh and sundried tomatoes, garlic, oil, salt and pepper in a large bowl
-
Marinate at room temperature for 45 minutes, stirring occasionally
-
Boil pasta in salted water until al dente
-
Drain well and while still hot, toss with tomato mixture
-
Coarsely chop the basil and combine with the pasta
-
Top with parmesan cheese and serve immediately or at room temperature
