Chilled Cucumber and Avocado Soup

Sipping a Sparkling Wine like Juve' Y Camps Extra Brut Spanish Cava - a great aperitif wine - while preparing this delicious summery recipe. "It takes about 15 minutes to throw this soup together, and another 5 minutes to garnish" It's great on a hot day, and it's very refreshing on the palate. When it comes to sitting down and eating, pair the soup with a Le Muse Piave Pinot Grigio

Serves 6
     
1
large English cucumber, peeled and seeded  
2
ripe avocados, fresh removed  
1/2
jalapeno pepper, seeded, ribs removed  
1/2 cup
unoaked white wine, preferably. Sauvignon Blanc  
1 cup
plain yogurt  
1/2 tsp
ground cumin  
1/4 cup
heavy cream
1 tbsp
lime juice
-
basil oil, heavy cream and fresh chives for garnish

Reserve one avocado for garnish

Combine remaining ingredients in a blender and puree until smooth and creamy

Then chill the mixture for a minimum of one hour
-
Just prior to serving (avocados oxidize quickly) divide mixture evenly among six bowls

Chop the flesh of the remaining avocado and make a small pile in the canter of each bowl

Drizzle a small amount of cream around the avocado

Repeat process with the basil oil, adding a few drops to each bowl

Top decoratively with chives
