large English cucumber, peeled and seeded | |

ripe avocados, fresh removed | |
|
1/2
|
jalapeno pepper, seeded, ribs removed | |
|
1/2
cup

unoaked white wine, preferably. Sauvignon Blanc | |
|
1
cup
|
plain yogurt | |
|
1/2
tsp
|
ground cumin | |
|
1/4
cup
|
heavy cream | |
|

tbsp
|
lime juice | |

basil oil, heavy cream and fresh chives for garnish | |

Reserve one avocado for garnish | |
|

Combine remaining ingredients in a blender and puree until smooth and creamy | |

Then chill the mixture for a minimum of one hour | |

Just prior to serving (avocados oxidize quickly) divide mixture evenly among six bowls | |

Chop the flesh of the remaining avocado and make a small pile in the canter of each bowl | |

Drizzle a small amount of cream around the avocado | |

Repeat process with the basil oil, adding a few drops to each bowl |

Top decoratively with chives | |
