Tomato Pasta Sauce Recipes
With a few choice ingredients or a clever cooking technique, a simple tomato sauce becomes the base for a sensational meal. For example, roasted plum tomatoes and garlic, can create a sauce of incredible depth and sweetness. There's also a fresh tomato sauce with chunks of mozzarella; a rich tomato-cream sauce; and a marinara sauce


Roasted Tomato Sauce
Makes 4 main dish servings

medium-size ripe plum tomatoes
medium garlic cloves, unpeeled
olive oil
salt
coarsely ground black pepper
penne or corkscrew pasta, cooked
Grated Romano cheese (optional )

1) Preheat oven to 450 F. Cut each tomato lengthwise in half. In a jelly roll pan, toss plum tomatoes and garlic cloves with 1 tbsp olive oil. Roast tomatoes and garlic 50 to 60 minutes, until tomatoes are well browned and garlic cloves are soft

2) Let tomatoes and garlic cool 20 minutes in pan. When tomatoes and garlic are cool, over medium bowl, carefully peel tomatoes. Squeeze garlic cloves from skins into bowl. 3) With spoon, break up peeled tomatoes and garlic. Stir in salt, pepper and remaining 1 tbsp olive oil until blended. To serve, toss cooked pasta with sauce. Sprinkle with grated Romano cheese, if you like.


Summer Tomato Sauce with Mozzarella

ripe tomatoes, cut into 1/2 inch pieces
fresh mozzarella cheese, cut into 1/2 inch pieces
packed fresh basil leaves
olive oil
red wine vinegar
salt
coarsely ground black pepper
penne or ziti, cooked

small onion, chopped
garlic cloved, minced
plum tomatoes in juice
tomato paste
chopped fresh basil or parsley (optional)
spaghetti or rigatoni, cooked
In a medium bowl, combine tomatoes with their juice and remaining ingredients except pasta, stirring gently to mix well. Allow sauce to stand 15 minutes to develop flavor. To serve, toss cooked pasta with sauce. In 3 quart saucepan, heat oil over medium heat; add onion and garlic and cook until tender. Stir in tomatoes with their juice, tomato paste, and basil, if using; heat to boiling over high heat, breaking up tomatoes with back of spoon. Reduce heat to low. Partially cover pan; simmer, stirring occasionally, 20 minutes. To serve, toss cooked pasta with sauce.
