Creamy Pasta Sauce Recipes
Besides being rich and satisfying, cream based pasta sauces generally take little time to prepare. In the time it takes to boil water and cook the pasta, the sauce can be ready and waiting. Enjoy the traditional Alfredo sauce made with real cream, or try a light version.


Smoked Salmon and Cream Sauce
Makes 4 main dish servings

large carrot
sliced smoked salmon
dry vermouth or dry white wine
half-and-half or light cream
salt
ground black pepper
chopped fresh dill
bowtie or medium shell pasta, cooked
Dill sprigs for garnish

1) Shred carrot
(1 cup). In nonstick 10 inch skillet, heat carrot and 1/2 cup water to boiling over medium-high heat. Cook 5 minutes, or
until carrot is tender.
2) Meanwhile, cut salmon slices into
2 inch pieces. Add vermouth to carrot mixture. Heat to boiling; cook 1 minute. Add cream,
salt, and pepper; heat to boiling, stirring constantly. Cook 1 minute longer.
3) Remove skillet
from heat; stir in salmon pieces and chopped fresh dill.
To serve, toss
cooked pasta with salmon mixture until
pasta is well coated; garnish with dill sprigs.


Light Alfredo Sauce
Makes 4 main dish servings
Classic Alfredo Sauce
Makes 6 main dish servings

fettuccine
broccoli, cut into small flowerets
vegetable oil
small onion, diced
garlic clove, minced
skim milk
chicken broth
all purpose flour
salt
coarsely ground black pepper
freshly grated Parmesan cheese
2 cups
1 cup
2 tbsp
1/2 tsp
1/4 tsp
16 oz
heavy or whipping cream
freshly grated Parmesan cheese
butter
salt
coarsely cracked black pepper
fettuccine, cooked
Prepare fettuccine. When pasta has cooked for 9 minutes, add broccoli flowerets to cooking water; cook 3 minutes longer. Drain

Meanwhile, in nonstick 12 inch skillet, heat oil over medium heat; add onion and garlic and cook until golden. In medium bowl, whisk milk, chicken broth, flour, salt, and pepper until blended; stir into skillet and cook until mixture thickens and boils. Stir in Parmesan cheese. To serve, toss cooked fettuccine and broccoli with sauce.
  In 2 quart saucepan, heat cream to boiling over medium high heat, stirring frequently. Reduce heat to medium; gradually stir in 1/2 cup Parmesan cheese.

Add butter, 1 tbsp at a time, stirring. Add salt and pepper. To serve, toss cooked pasta with sauce; sprinkle with remaining Parmesan cheese.
