Wash well 2 large peppers, and remove their inside trying not to break the outer part. | |

Chop the smaller pepper, the eggplant, the courgettes and cook them together in a little olive oil till they become soft. | |

Add salt, pepper, 1 egg, the parmesan cheese and the bread crumbs, and mix everything until you have a smooth stuffing. | |

Fill the large peppers with the stuffing, and place them in a casserole lined with cooking paper. | |

Cook them in the oven at 200ºC for approximately 30 minutes (till you see them roasted). | |
