Potatoes & Onions  
Serves 4

medium-sized potatoes
2
coffee-cups of milk
60 gr.
grated parmesan cheese
100 gr.
gruyere cheese (or other sweet cheese)
30 gr.
butter
4 slices
boiled ham or mortadella
1
sliced onion
a little
bread crumbs
a pinch
salt, pepper, nutmeg
a little
rosemary

Butter a heat-resisting pan and strew with bread crumbs. Cover the bottom of the pan with 3 peeled and thinly sliced potatoes.

Wet them with a coffee-cup of milk, add half sliced onion, salt, pepper, a little nutmeg and a pinch of rosemary.

Add ¾ of the grated parmesan cheese, ham or mortadella, cover with gruyere cheese, then cover with the remaining 3 sliced potatoes.

Add 1 coffee-cup of milk, the remaining half sliced onion and finish with the parmesan cheese left, salt, pepper, rosemary and just a veil of bread crumbs.

Decorate with 3 or 4 pieces of butter and put it into the oven for about 50 minutes at moderate heat, till golden.
