Italian Loaf Sandwich
A club sandwich traditionally begins as three slices of bread or toast, which allows you to layer it with the maximum amount of fillings,if this sandwich seems unwieldy, secure them with toothpicks.
Serves 6
Italian Loaf Sandwich
4 tbsp
olive oil
2
medium onions, cut into 1/2 inch thick slices
1
12" long loaf whole grain bread (about 5" wide and 3" high)
3 tbsp
red wine vinegar
1 bunch
arugula
6 oz
thinly sliced salami
8 oz
fresh mozzarella cheese, thinly sliced
2
medium red peppers, roasted and peeled
2
medium tomatoes, sliced
9 oz jar
Italian hot-pepper slices, drained

In 10 inch skillet, heat 2 tbsp oil over medium heat

Add onions, cook, stirring occasionally, 20 minutes, or until tender and golden

Set aside
-
Cut bread horizontally into 3 slices

In large bowl, with wire whisk or fork, mix vinegar and remaining oil
-
Brush some of oil mixture over cut sides of bread

To remaining oil mixture in bowl, add arugula, toss to coat
 
To Assemble

Arrange half of arugula on bottom of loaf
-
Top with half of salami, all of cheese, and all of roasted peppers

Place middle slice of bread over peppers and arrange tomato slices on bread

Top with sautéed onions and hot pepper slices, salami, and arugula
-
Replace top of loaf
-
For easier slicing, wrap sandwich tightly in plastic wrap, refrigerate 1 hour to allow juices from ingredients to moisten and flavor bread

To serve, cut sandwich into thick slices
