After having removed the outer hard leaves, cut four middle-sized artichokes into 8 sections each, and keep them in water with a few drops of lemon juice for a few hours: this will take away the artichokes' slight bitter taste. | |

Drain them well, flour them, and then fry them after having dipped them in a beaten egg. | |

When they are ready, place a layer of fried artichokes in a baking pan, without adding any fat. Cover them with grated parmesan cheese, place some mozzarella cheese slices on it. | |

Add a second layer of fried artichokes, and cover these ones too with parmesan and mozzarella cheese. | |

Place the pan into the oven at moderate heat, for about 10 minutes (till the cheese is melted). Eat warm. | |
