Cheese Crown 
Serves 4
250 ml.
milk
60 gr.
butter
150 gr.
flour
4
eggs
130 gr.
mixed cheeses (gruyere, parmesan cheese, etc.)
a pinch
pepper

Warm two teacups of milk with butter and a pinch of pepper; when it starts boiling, pour in quickly all the flour and stir for a few seconds, till the dough becomes homogeneous and masses around the spoon.

Remove it from the fire, and let it cool.

Then add 4 eggs, one at a time; each of them should be carefully amalgamated before adding the next one.

Add 100 gr. of grated cheese and place the dough in a buttered and floured pan, shaping it as a ring; then sprinkle 30 gr. of chopped cheese over it.

Cook in the oven at moderate heat for about 50 minutes, till golden or brown.

Wait a few minutes before removing it from the open oven, and eat it warm.
