Warm two teacups of milk with butter and a pinch of pepper; when it starts boiling, pour in quickly all the flour and stir for a few seconds, till the dough becomes homogeneous and masses around the spoon. | |

Remove it from the fire, and let it cool. | |

Then add 4 eggs, one at a time; each of them should be carefully amalgamated before adding the next one. | |

Add 100 gr. of grated cheese and place the dough in a buttered and floured pan, shaping it as a ring; then sprinkle 30 gr. of chopped cheese over it. | |

Cook in the oven at moderate heat for about 50 minutes, till golden or brown. | |

Wait a few minutes before removing it from the open oven, and eat it warm. | |
