with Spicy Tomato Sauce

Calamari makes a special treat whether
its coated and panfried for crunch, simmered in a sauce or quickly grilled
|
||

small onion, finely chopped | |

red wine vinegar | |

cleaned squid | |
|

|
large egg, lightly beaten | |

all-purpose flour | |

lemon wedges and parsley sprigs for garnish | |
| Prepare Spicy Tomato Sauce | ||

In 1 quart saucepan, heat 1 tbsp oil over medium heat | |

Add onion and cook until tender | |
|

|
Add tomato sauce and red wine vinegar, sugar, salt, crushed red pepper, and dried oregano | |
|

|
Heat to boiling | |
|

|
Reduce heat to low | |
|

|
Cover and simmer 5 minutes, keep warm | |

Slice squid bodies crosswise into 3/4 inch wide rings | |
|

|
Cut tentacles into several pieces if they are large | |

In bowl, toss squid pieces with egg to coat | |
|

Measure flour onto waxed paper | |
|

In 10 inch skillet, heat 1/2 inch oil over medium heat | |

Dip squid in flour | |
|

|
Add to skillet and cook in small batches until golden | |
|

|
With slotted spoon, transfer squid to paper towel to drain | |
|

|
Serve fried squid with warm tomato sauce | |

Garnished with lemon wedges and parsley sprigs | |
