Calamari with Spicy Tomato Sauce
Calamari makes a special treat whether its coated and panfried for crunch, simmered in a sauce or quickly grilled
Serves 4
Calamari with Spicy Tomato Sauce
1 tbsp
vegetable oil
-
vegetable oil for frying
1
small onion, finely chopped
8 oz
tomato sauce
3 tbsp
red wine vinegar
1 1/2 tsp
sugar
1/2 tsp
salt
1/4 tsp
crushed red pepper
1/4 tsp
dried oregano
1 lb
cleaned squid
1
large egg, lightly beaten  
2/3 cup
all-purpose flour

lemon wedges and parsley sprigs for garnish
 
Prepare Spicy Tomato Sauce
-
In 1 quart saucepan, heat 1 tbsp oil over medium heat
-
Add onion and cook until tender
-
Add tomato sauce and red wine vinegar, sugar, salt, crushed red pepper, and dried oregano

Heat to boiling

Reduce heat to low
-
Cover and simmer 5 minutes, keep warm

Slice squid bodies crosswise into 3/4 inch wide rings

Cut tentacles into several pieces if they are large

In bowl, toss squid pieces with egg to coat
-
Measure flour onto waxed paper

In 10 inch skillet, heat 1/2 inch oil over medium heat

Dip squid in flour
-
Add to skillet and cook in small batches until golden
-
With slotted spoon, transfer squid to paper towel to drain

Serve fried squid with warm tomato sauce
-
Garnished with lemon wedges and parsley sprigs
