| Quiche means savory tart. This particular quiche is a specialty from Le Lorraine region which is closer to the German border. Lorraine cuisine is filled with cream. This particular recipe handy for picnics as it can also be eaten cold. | ||

4 - 6 hot or cold

Water | |

throughcut bacon rashers | |

cheddar cheese | |

milk or single cream | |

Sift the flour, salt and pepper into a bowl | |

Rub in 4 oz of the butter till mixture resembles breadcrumbs | |

Gradually add the water and knead to a dough | |

Roll out and use to line a greased 8 inch pie plate or flan dish | |

Leave to stand for 30 minutes | |

Preheat the oven to 400 F | |

Derind and dice the bacon | |

Fry lightly in the remaining butter | |

Grate or thinly slice the cheese | |

Sprinkle bacon and cheese over the bottom of the flan case | |

Beat together the eggs, milk or cream and seasoning in a bowl | |

Pour mixture into flan | |

Do not overfill | |

Bake for 15 minutes, then reduce heat to 325 F and bake for further 25-30 minutes | |
