Viennese Sweet Semolina  
Serves 4 - 6
2 oz
sultanas
1 pint
milk
1 1/2 oz
butter
3 oz
semolina
4 tbsp
caster sugar
Preheat the oven to 350 F
-
Soak the sultanas in warm water
-
Put the milk into a saucepan with butter
-
Heat till warm, then pour in the semolina and bring to boil, stirring constantly
-
Simmer for 5 minutes, then stir in all but 1 tbsp of the sugar
-
Drain sultanas and mix into semolina
-
Turn into a greased ovenproof dish and smooth top
-
Bake for 30 minutes
-
Remove dish from oven and increase heat to 400 F
-
Mix the semolina with a fork to break it up
-
Return dish to oven for 5 minutes till mixture is dry and crisp
-
Turn on to a warmed serving dish
-
Sprinkle with the reserved sugar and serve hot
