Scandinavian Pork
Serves 6 - 8
8 oz
Plump prunes
1
Large cooking apple
2 tbsp
Lemon juice
3 lb
Piece of belly of pork
Salt and pepper
1 tbsp
Oil
1/2 pint
Stock
2 tbsp
Plain flour
Sprigs of parsley

Soak prunes in 1/2 pint of hot water for 1 hour
Preheat oven 375 F

Drain prunes, reserving soaking water, and remove stones

Peel, core and slice apple
-
Toss in lemon juice to prevent browning and add to prunes

Season pork
-
Place apple and prunes along the canter, then roll up lengthwise and tie into a near shape with a fine string

Place in a roasting tin and rub oil into skin
-
Sprinkle with salt and roast for 45 minutes

Pour prune soaking liqueur and stock over pork

Reduce temperature to 350 F and roast for a further 1 1/4 hours

Place the meat on a warmed serving dish, discard the string and keep hot

Drain pan juices into a small saucepan and skim off any fat

Blend flour to a smooth paste with 4 tbsp of cold water

Add to meat juices and bring to the boil, stirring constantly

Simmer for 4-5 minutes

Carve pork into thick slices and garnish with sprigs of parsley

Serve with gravy
