Juice of lemon | |

Carton of double cream | |

Hard boiled eggs | |

Peel and dice potatoes and carrots | |
|

|
Top and tail beans and remove strings | |
|

|
Cut beans into small pieces | |
|

Trim and finely dice celery | |
|

Place potatoes in boiling salted water and cook for 5 minutes | |

Remove with draining spoon, place in colander and rinse under cold water | |

Add carrots to pan and cook for 5 minutes | |

Remove and rinse | |

Add beans, peas and celery to pan and cook for 4 minutes | |

Remove and rinse | |
|

|
Drain cooled vegetables and place in bowl with capers | |

Add lemon juice and salt and pepper | |

Pour cream over and mix carefully | |

Pile salad on to a serving plate | |

Shell and quarter eggs and arrange round the edge of plate | |
