Grated rind of lemon | |

Granulated sugar | |

Semolina or ground rice | |

Egg | |

Can of cherries | |

Redcurrant jelly | |

In a saucepan, heat the milk, salt, lemon rind and 2 oz of the sugar | |

Stir in the semolina or ground rice | |

|
Remove from the heat | |
|

|
Separate the egg and add the beaten yolk to the saucepan | |

|
In a bowl, beat the egg white till stiff and carefully fold into the semolina or ground rice mixture | |

Drain cherries | |
|

|
Place cherries and 2 tbsp of the juice in a pan | |

|
Stir in the red currant jelly and cook for 5 minutes | |

Preheat the grill | |

Grease a flameproof serving dish | |

Pour in half the semolina or rice mixture, then all the cherry mixture and finally the rest of the semolina or rice | |

Sprinkle the remaining sugar and place under the grill | |

Cook till the sugar caramelizes and turns golden but not brown - it should take about 3 minutes | |

Serve immediately | |
