Polish Pork with Sauerkraut
Serves 6
3 tbsp
Oil
6
Pork loin chops
1
Large onion
1
Garlic clove
-
Salt and pepper
2 lb
Sauerkraut
1
Bay leaf
1/2 pint
Chicken stock
1
Large dessert apple
1 tsp
Cumin seeds

Heat oil in a flameproof casserole and fry the chops till browned on both sides

Remove from pan and reserve

Peel and finely chop the onion
-
Peel and crush the garlic
-
Add both to the casserole and fry till transparent

Season, and add the drained sauerkraut and bay leaf
-
Arrange the chops on top
-
Pour the stock over, bring to the boil and simmer for 15 minutes

Peel, core and dice the apple
-
Add to the pan with cumin seeds and stir well, then simmer for a further 15 minutes till the chops are tender

Taste and adjust the seasoning

Discard the bay leaf
-
Serve with creamed potatoes, buttered carrots and thin slices of whole-wheat bread
