Sauerkraut | |

Bay leaf | |

Chicken stock | |

Large dessert apple | |

Cumin seeds | |

Heat oil in a flameproof casserole and fry the chops till browned on both sides | |

Remove from pan and reserve | |
|

Peel and finely chop the onion | |
|

Peel and crush the garlic | |
|

Add both to the casserole and fry till transparent | |
|

Season, and add the drained sauerkraut and bay leaf | |

Arrange the chops on top | |
|

Pour the stock over, bring to the boil and simmer for 15 minutes | |

Peel, core and dice the apple | |
|

Add to the pan with cumin seeds and stir well, then simmer for a further 15 minutes till the chops are tender | |

Taste and adjust the seasoning | |

Discard the bay leaf | |

Serve with creamed potatoes, buttered carrots and thin slices of whole-wheat bread | |
