Hungarian Chicken Goulash
This spicy blend of caraway, paprika and chili powder in this goulash puts economical chicken into a party mood.
Serves 8
16
chicken thighs
3
onions, sliced
2
cloves garlic, minced
4
carrots, sliced
2
sweet green peppers, chopped
3 tbsp
sweet Hungarian paprika
1 tsp
caraway seeds
1 tsp
salt
1/2 tsp
pepper
1/4 tsp
chili powder
1 cup
chicken stock
1 can
stewed tomatoes
1/2 cup
sour cream
2 tbsp
all-purpose flour
2 tbsp
chopped fresh parsley

Remove skin from chicken
-
In Dutch oven, brown chicken over medium-high heat, in batches, until golden

Remove from pan and set aside

Drain off fat from pan

Add onions and garlic, cook over medium heat, stirring for 5 minutes

Add carrots, green peppers, paprika, caraway, salt, pepper and chili powder, cook, stirring for 2 minutes

Add chicken stock and tomatoes, stirring to scrape up brown bits

Return chicken to pan

Bring to boil, reduce heat and simmer for 40 minutes or until chicken is no longer pink inside

Remove to platter, cover and keep warm

In small bowl, combine sour cream and flour until smooth

Stir into pan, simmer, stirring, until thickened

Pour over chicken

Garnish with parsley
