Tomato Dill Trout 
This colorful fish entree can be cooked to perfection in the microwave, or try baking or barbecuing it, for a change. It's simple to multiply ingredients for more servings
Serves 1
1/4 cup
chopped onion
1/4 cup
diced red or green pepper
half
tomato, seeded and chopped
1/4 cup
sliced mushrooms
1/2 tsp
olive oil
1 tbsp
chopped fresh dill
4 oz
trout filets, skinned
1 tsp
lime or lemon juice
Microwave
-
In 2-cup microwaveable casserole dish, mix together onion, red pepper, tomato, mushrooms, oil, garlic and half each of the salt and pepper
-
Cover and microwave at high for 2 minutes

Stir in half of the dill; top with fillets
-
Sprinkle with lime juice and remaining dill, salt and pepper

Cover and microwave at high for 2 minutes

Let stand for 5 minutes
To Bake
-
Bake vegetable mixture, covered, in 400 F oven or toaster oven for 10 minutes

Add remaining ingredients; bake, covered, for 10 minutes or until fish is opaque and flakes easily when tested with fork
To Barbecue
-
Center vegetable mixture on large square of heavy-duty foil
-
top with remaining ingredients
-
Fold foil over and seal with double fold; tuck ends under
-
Place on grill over medium-high heat; cook for 20 minutes, turning once
