| This colorful fish entree can be cooked to perfection in the microwave, or try baking or barbecuing it, for a change. It's simple to multiply ingredients for more servings | ||

diced red or green pepper | |
|

tomato, seeded and chopped | |

sliced mushrooms | |

chopped fresh dill | |

trout filets, skinned | |

lime or lemon juice | |
| Microwave | ||

In 2-cup microwaveable casserole dish, mix together onion, red pepper, tomato, mushrooms, oil, garlic and half each of the salt and pepper | |

Cover and microwave at high for 2 minutes | |

Stir in half of the dill; top with fillets | |

Sprinkle with lime juice and remaining dill, salt and pepper | |

Cover and microwave at high for 2 minutes | |

Let stand for 5 minutes | |
| To Bake | ||

Bake vegetable mixture, covered, in 400 F oven or toaster oven for 10 minutes | |

Add remaining ingredients; bake, covered, for 10 minutes or until fish is opaque and flakes easily when tested with fork | |
| To Barbecue | ||

Center vegetable mixture on large square of heavy-duty foil | |

top with remaining ingredients | |

Fold foil over and seal with double fold; tuck ends under | |

Place on grill over medium-high heat; cook for 20 minutes, turning once | |
