Chicken with Sausages

| When the occasion calls for comfort food for a crowd, this sausage and chicken combo napped with maple hits the spot | ||

small sausages | |

Spanish onion, sliced | |

vegetable oil | |

maple syrup | |

In shallow dish, combine flour, salt and pepper | |
|

Dredge chicken in mixture and set aside | |
|

|
Heat large skillet over medium-high heat | |
|

Cook sausages for about 3 minutes or until lightly browned but not cooked completely | |

Remove and set aside | |
|

|
Separate onion into rings and add to skillet along with 3 tbsp water | |

Cook for 5 minutes or until golden | |

Remove and set aside | |
|

|
Add oil to skillet, brown chicken, in batches, for about 5 minutes per side | |

Arrange in single layer in large roasting pan, top with sausages and onion | |

Drain fat from skillet, pour in 1/2 cup of water, stirring to scrape up brown bits from bottom of pan | |

Stir in maple syrup, pour over chicken | |
|

Bake, uncovered, in 350 F oven, basting occasional, for 45 minutes or until tender and juices run clear when chicken is pierced | |

Skin fat from sauce, pass sauce separately | |
