Grill-Pan Salmon Steaks
Get a great year-round barbecue taste and typical marks using a ridged cast-iron grill pan on your stove. Of course, you can barbecue these steaks outside, too.
Serves 4
2 tbsp
olive oil
1 tbsp
vinegar
1 tbsp
grated orange rind
1/3 cup
orange juice
2
cloves garlic, minced
2 tsp
paprika
1/2 tsp
each salt and cayenne pepper
4 - 6 oz
salmon steaks or fillets

Whisk together oil, vinegar, orange rind and juice, garlic, paprika, salt and cayenne. Set aside 2 tbsp

Pour remainder into shallow glass dish; add salmon, turning to coat

Cover and marinate for 30 minutes turning once

Heat grill pan over medium heat until pan sizzles when sprinkled with a few drops of water

Brush with oil

Grill salmon for about 4 minutes per side or just until opaque and fish flakes easily when tested with fork

To serve, brush with reserved marinade
