| Get a great year-round barbecue taste and typical marks using a ridged cast-iron grill pan on your stove. Of course, you can barbecue these steaks outside, too. | ||

grated orange rind | |

orange juice | |

cloves garlic, minced | |

salmon steaks or fillets | |

Whisk together oil, vinegar, orange rind and juice, garlic, paprika, salt and cayenne. Set aside 2 tbsp | |

Pour remainder into shallow glass dish; add salmon, turning to coat | |

Cover and marinate for 30 minutes turning once | |

Heat grill pan over medium heat until pan sizzles when sprinkled with a few drops of water | |

Brush with oil | |

Grill salmon for about 4 minutes per side or just until opaque and fish flakes easily when tested with fork | |

To serve, brush with reserved marinade | |
