Curried Chicken Salad with Mango
Use quick cooking boneless chicken breasts, or simply purchase a roasted chicken.
Serves 4
Curried Chicken Salad with Mango
1 lb
skinless, boneless chicken breast halves
-
salt
1 tsp
curry powder
1/3 cup
plain low fat yogurt
1/4 cup
mayonnaise
2 tbsp
mango chutney, chopped
2 tbsp
fresh lime juice
1/4 tsp
ground black pepper
1
large ripe mango, diced
3
celery stalks, thinly sliced
1/4 cup
chopped fresh cilantro

lettuce leaves
2 tbsp
sliced almonds, toasted (optional)

In 3 quart saucepan, heat chicken with 1 tsp salt and water to cover by 1 inch to boiling over high heat

Reduce heat to low, simmer 10 minutes, or until cooked through

Cool in liquid 30 minutes
Prepare Dressing

In large bowl, with wire whisk or rubber spatula, mix curry powder with yogurt, mayonnaise, chutney, lime juice, pepper, and 1/2 tsp salt

Drain chicken

Cut into bite size pieces

Toss chicken, mango, celery, and cilantro with dressing

Line platter with lettuce

Top with salad, and almonds, if using
