Beef-Marinated Barbecued Pork Chops
This marinade capitalizes on the slight bitterness that beer drinkers cherish. Any beer can be used. Serve with Embered Onions and sweet potatoes
Serves 4
4
pork loin chops (about 3/4 inch thick)
Beer Marinade
1/4 cup
beer
1/4 cup
rice vinegar
2 tbsp
canola oil
1 tbsp
molasses
1 tsp
salt
1/2 tsp
pepper
1/4 tsp
cinnamon

Trim excess fat from chops, arrange in shallow dish
Beer Marinade

In jar with tight-fitting lid, shake together beer, vinegar, oil, molasses, salt, pepper and cinnamon

Pour over chops turning to coat

Cover and marinate in refrigerator for at least 4 hours or up to 24 hours

Let stand at room temperature for 30 minutes

Reserving marinade, place chops on greased grill over medium heat

Cook, turning and brushing with marinade once, for about 10 minutes or just until no longer pink inside
