Apple Buttermilk Muffins
What better way to start the day than with warm, fragrant muffins packed with moist apples. Muffins can be made in minutes. For a tender texture, use a light hand when mixing the wet and dry ingredients (stir the batter just until the flour is moistened), then gently fold in added extras, and bake.
Serves 12
Apple Buttermilk Muffins
2
medium apples
2 cups
all purpose flour
1/2 cup
packed light brown sugar
2 tsp
baking powder
1 tsp
baking soda
1/2 tsp
salt
1 cup
buttermilk
1/4 cup
vegetable oil
2 tsp
vanilla extract
1
large egg
1/2 cup
walnuts, chopped (optional)
1 tbsp
granulated sugar
1 tsp
ground cinnamon

Preheat oven to 400 F

Grease twelve 2 1/2" by 1 3/4" muffin pan cups

Peel, core, and dice apples (you should have about 2 cups)

In large bowl, mix flour, brown sugar, baking powder, baking soda, and salt

In small bowl, with wire whisk or fork, mix buttermilk, oil, vanilla, and eggs until blended

Stir buttermilk mixture into flour mixture just until moistened (mixture will be lumpy)

Fold in apples, and walnuts, if using

Spoon batter into muffin pan cups

In cup, mix granulated sugar and cinnamon, sprinkle over muffins

Bake 25 minutes, or until toothpick inserted in center comes out clean

Immediately remove muffins from pan

Serve warm, or cool on wire rack, reheat if desired
