| What better way to start the day than with warm, fragrant muffins packed with moist apples. Muffins can be made in minutes. For a tender texture, use a light hand when mixing the wet and dry ingredients (stir the batter just until the flour is moistened), then gently fold in added extras, and bake. | ||

buttermilk | |
|

vegetable oil | |

vanilla extract | |

walnuts, chopped (optional) | |

granulated sugar | |
|

ground cinnamon | |

Preheat oven to 400 F | |
|

Grease twelve 2 1/2" by 1 3/4" muffin pan cups | |
|

Peel, core, and dice apples (you should have about 2 cups) | |
|

In large bowl, mix flour, brown sugar, baking powder, baking soda, and salt | |
|

|
In small bowl, with wire whisk or fork, mix buttermilk, oil, vanilla, and eggs until blended | |
|

|
Stir buttermilk mixture into flour mixture just until moistened (mixture will be lumpy) | |

Fold in apples, and walnuts, if using | |

|
Spoon batter into muffin pan cups | |
|

In cup, mix granulated sugar and cinnamon, sprinkle over muffins | |

Bake 25 minutes, or until toothpick inserted in center comes out clean | |

Immediately remove muffins from pan | |
|

Serve warm, or cool on wire rack, reheat if desired | |
