Marmalade Oatmeal Muffins
Serves 16 to 18 Muffins - Served Warm

2 cups
Old fashioned rolled oats
2 cups
Whole wheat flour
5 tsp.
Baking powder
1 tsp.
Salt
2
Eggs, large
1 cup
Golden raisins
1/2 cup
Chopped walnuts
3/4 cup
Any of flavor of Marmalade
1/2 cup
Orange juice
1/2 cup
Vegetable oil
1 cup
Milk
2 tsp.
Finely grated orange peel
  Method
-
Preheat the oven to 400 degrees F

Grease muffin tins
-
In a large mixing bowl, stir together rolled oats, flour, baking powder, salt, raisins and walnuts

In a small bowl, beat the eggs lightly, then beat in the remaining ingredients
-
Make a well in the center of the dry ingredients
-
pour in the egg mixture, stirring only enough to moisten the dry ingredients
-
Spoon the batter into the greased muffin tins, filling them about 2/3 full
-
Bake for 20-25 minutes
