Mix the flour, suet and salt in a bowl, then stir in with the blade of a knife | |
|

|
Add enough water to bind the mixture to a light dough | |
|

|
Roll it out to an oblong shape to a thickness of about 1/4 inch | |

Spread the center lavishly with Jam leaving a margin of 1 inch at the sides and one end | |

Roll up loosely starting from the jammy end | |

Enclose it in a loose parcel of foil; it should have pleats in it so that it can expand with the roly poly; this helps to keep the pudding light | |

Fill the bottom half of a large steamer with water and bring to boil | |

Put the pudding roll in the top over the boiling water | |
|

Cover the pan and steam for 2 hours, top with more boiling water as required | |
