Apple Fritters
The fritters should be eaten very hot indeed, so only start the frying when all the company is ready and waiting. Bananas can also be done in the same way.
Serves 4
Apple Fritters
3
medium, cooking apples, peeled and cored
2 oz
plain flour
pinch
salt
1 tsp
icing sugar, sifted
4 tbsp
water, lukewarm
2 tsp
butter, melted
1
egg white

oil for deep frying
-
icing sugar, sifted for dredging

fresh cream or natural yogurt - to serve

Cut the apples into ¼ inch thick rings.

Sift the flour and salt into a bowl.

Add the sugar.

Gradually mix to a thick, smooth batter with the water and butter.

Whisk the egg white to a stiff snow.

Fold into the flour mixture.

Coat the apple rings with the batter.

Fry in deep hot fat or oil for 2-3 minutes or until golden.

Remove from the pan and drain on absorbent kitchen paper.

Dredge thickly with sifted icing sugar.

Accompany with fresh single cream, soured cream or natural yogurt.
Variation: Banana Fritters

Follow the recipe and method for apple fritters.

Omit the apples and use small bananas, peeled and cut in half lengthways.
