Yellow Curried Pork
Instead of stewing cubes, this unusual Cambodian pork curry is made with quick-cooking minced or ground meat. The whole dish, with its raw vegetable garnish, can be put together in the time it takes to cook the rice.
Serves
1/2 tsp
prabok (fish paste) mashed
2 tsp
fish sauce
1/4 cup
medium coconut milk
1 tsp
yellow curry paste
1/2 cup
ground pork
1/4 cup
diced yellow onion
1/2 tsp
sugar
2 tbsp
minced green onion, for garnish
   
Vegetable Garnish

cucumber slices, sliced cabbage, bean sprouts, Thai eggplant, mint sprigs, red chile

Combine prabok and fish sauce in a small bowl and mash with a fork. Remove any bones. Set aside

In a skillet bring coconut milk to a boil

Add curry paste and cook over high heat until reduced by half

Add pork and cook until meat is nearly done

Add onion, sugar and prahok mixture and cook until thick (about 3 minutes)

Transfer to a serving bowl

Serve with green onions and raw vegetable garnish to dip in the curry sauce
