Stuffed Crab Shells
Serves 4
4
medium sized crabs
4 oz
lean pork
1
small onion
2
cloves garlic
1 inch
knob fresh ginger
1 tsp
chopped coriander root
2
finely chopped coriander leaves
4 fl oz
thick coconut milk
2 tbsp
cornflour
1
egg, lightly whisked

salt to taste
-
freshly ground black pepper
-
oil, for deep frying

Cook the crabs in rapidly boiling water
-
Carefully remove the top shells and set these aside
-
Extract all the meat from the body of the claws and shred finely

Chop the pork very finely or pass through a mincer

Chop the onion, garlic and ginger
-
Place all the ingredients in a bowl and mix thoroughly
-
Transfer the mixture into the crab shells and place in a steamer for 30 minutes
-
Remove, set aside and allow to cool
-
Just prior to serving, heat the oil until it begins to smoke, then deep fry the stuffed shells for 2 minutes, until the top is a golden brown
