medium sized crabs | |

lean pork | |

small onion | |

cloves garlic | |

knob fresh ginger | |

chopped coriander root | |

finely chopped coriander leaves | |

thick coconut milk | |

cornflour | |

egg, lightly whisked | |

salt to taste | |

freshly ground black pepper | |

oil, for deep frying | |

Cook the crabs in rapidly boiling water | |

Carefully remove the top shells and set these aside | |

Extract all the meat from the body of the claws and shred finely | |

Chop the pork very finely or pass through a mincer | |

Chop the onion, garlic and ginger | |

Place all the ingredients in a bowl and mix thoroughly | |

Transfer the mixture into the crab shells and place in a steamer for 30 minutes | |

Remove, set aside and allow to cool | |

Just prior to serving, heat the oil until it begins to smoke, then deep fry the stuffed shells for 2 minutes, until the top is a golden brown | |
