Indonesian Fish Curry 
Serves 4
1 1/2 lb
Cod or coley fillets
pinch
Salt and pepper
2 tbsp
Plain flour
1
Onion
1
Large cooking apple
1 tbsp
Lemon juice
2 oz
Butter
2 tbsp
Oil
2 tbsp
Curry powder
1 pint
Stock
2 tbsp
Sultanas
2 tbsp
Cornflour
2 oz
Split almonds

Cut fish into pieces, sprinkle with salt and coat with flour

Peel and slice onion

Peel, core and slice apple and sprinkle with lemon juice

Heat the butter and oil in a flameproof casserole

Add curry powder and onion and fry for 5 minutes

Add fish and cook for a few minutes on all sides

Add apple slices and cook for 3 minutes

Pour stock into casserole and add sultanas

Blend cornflour with a little stock or water and stir in

Bring to the boil and simmer for 10-15 minutes

Add almonds and cook for a further 2 minutes

Taste and adjust seasoning and serve
