Large cooking apple | |

Split almonds | |

Cut fish into pieces, sprinkle with salt and coat with flour | |

Peel and slice onion | |

Peel, core and slice apple and sprinkle with lemon juice | |

Heat the butter and oil in a flameproof casserole | |

Add curry powder and onion and fry for 5 minutes | |

Add fish and cook for a few minutes on all sides | |

Add apple slices and cook for 3 minutes | |

Pour stock into casserole and add sultanas | |

Blend cornflour with a little stock or water and stir in | |

Bring to the boil and simmer for 10-15 minutes | |

Add almonds and cook for a further 2 minutes | |

Taste and adjust seasoning and serve | |
