Blackened Tuna With Fresh Tomato Salsa and Chuck Wagon Corn
Serves 4
Blackened Tuna With Fresh Tomato Salsa and Chuck Wagon Corn
1/4 cup
blackened steak seasoning blend
4
tuna steaks (1 1/2 pounds)

vegetable cooking spray
2 tbsp
butter
 
Method

Preheat sauté pan on high for 1-2 minutes.

Place seasoning blend in mixing bowl. Spray tuna evenly with cooking spray. Add tuna steaks, one at a time, to seasoning and coat evenly on all sides. Wash hands.

Add butter to sauté pan and swirl to coat. Using tongs, add tuna and cook for 4 minutes, turning halfway through cooking. Serve.

Note: This will cook 1/2-inch tuna steaks to medium. Adjust cook time according to thickness of tuna and personal taste.
Fresh Tomato Salsa
1 pint
cherry tomatoes
1 tbsp
cilantro
1/2
red onion
1
lime
-
salt and pepper, to taste

Wash tomatoes and cilantro.

Cut tomatoes in half and place in mixing bowl.

Dice onion and add to tomatoes.
-
Chop cilantro and add to tomato mixture. (Reserve a few sprigs for garnish.)

Wash and cut lime in half. Squeeze the juice of one half into the tomato mixture. (Reserve other half of lime for garnish.)

Add salt and pepper, to taste. Toss to mix. Serve.
Chuck Wagon Corn
1 tbsp
butter
2 cups
frozen corn
1/4 cup
frozen diced onions
1/4 cup
frozen diced green peppers
2 tbsp
diced pimientos
1 tsp
seasoned salt

Preheat sauté pan on high for 1-2 minutes.

Add butter to sauté pan and swirl to coat.

Stir in remaining ingredients; cook for 3 minutes, stirring occasionally.

Reduce heat to medium and cook for 7-10 minutes, stirring occasionally. Serve.
