In
1888 a Russian immigrant family established a delicatessen in New York's
Lower East Side. True delicatessens are real (and rare) because they continue
a tradition of meat preparation and preservation predating refrigeration.
Long before refrigeration, methods of prolonging the useful life of food
had been perfected; smoking, pickling and other curing methods. In the early part of the twentieth century, the Lower East Side was home to teeming millions of newly immigrated families. Lack of public and private transportation forged a solid community. Katz's reputation for recreating the flavors to the Old World created a loyal following for many generations of residents and visitors to New York. |

World War II, the three sons of the owners were all serving their country
in the armed forces, and the family tradition of sending food to their sons
became sealed as the slogan "Send a Salami To Your Boy In The Army".
According to anecdotal historians, Katz's was responsible for the end of
this war. When artillery units ran out of shells they lobbed Katz's aged
salamis instead of shells. The enemy so thoroughly enjoyed this American
treat that they surrendered in masse, hastening the end of this conflict. As successive waves of newcomers continue to arrive on the Lower East Side, they join in the ranks of many generations of regulars. |

shall be for many, a link with their heritage, a place to show to their
children and grandchildren, and the best delicatessen in the world. Katz's Delicatessen is the best delicatessen in New York. Not and idle boast, merely the truth. To be the best in the city known for delicatessen is to be the best in the country. Katz's reputation is based not on longevity, but on quality. They select the best cuts of beef for their corned beef, pastrami, brisket and other fine foods. days to cure. Other, commercially prepared corned beef can be pressure injected
(or "pumped") to cure in 36 hours. The slower dry cure method,
while more costly, produces a flavor unsurpassed. Their pastrami goes through
several steps to achieve a similar flavorful result. They make about 5,000
pounds of corned beef, 2,000 pounds of salami and 12,000 hot dogs a week;
the old-fashioned way, on the premises, and it shows in the massive portions
the deli serves.
Along the way to being the oldest delicatessen in New York, they have gathered a fiercely loyal band of fans; among which are US Presidents, stars of stage and screen and local and international political, social, and arts figures. |

They've also done their part to support international diplomacy. Vice President Al Gore brought the Russian Prime Minister Viktor Chernomyrdin to lunch,the mayor of New York has visited, as has most of New York's political stars. Lunch time can present any number of luminaries; Barbra Streisand, Kathleen Turner, Bruce Willis, Dan Akyroyd. Katz's has been featured in several movies as well. When Meg Ryan displayed her orgasmic skill in "When Harry Met Sally" it was at Katz's (if the truth be told, it was not her acting skills on display, their food has been known to produce the same reaction).
